This weekend was pretty busy for us (for more info click here), but that didn't stop me from completing another crochet project. I made another Gulf Shores Hat using Peaches & Cream cotton yarn in Strawberry Cream (I love pink!). I'm very happy with the way it turned out. I made both of these for my nieces for their summer vacation and I can't wait to send it to them!

One of my favorite parts about summer are all the new movies that are released! Right now it seems to be a particularly busy time for blockbuster movies to make their debut.
Wolverine appears to have been a huge success and everyone I've talked to has absolutely loved it! Hello hotties, not only is the hunky Hugh Jackman heating it up in this one, but my fave Ryan Reynolds makes this a double must see!
Angels and Demons opens this Friday, and I cannot wait! I read the book, and preferred it to the Da Vinci Code ten times over!
Night at the Museum 2: Battle of the Smithsonian is also on my list to see! I'm a huge fan of Ben Stiller, and I thought the first one was adorable!
Not to mention. Star Trek, Drag Me to Hell, Land of the Lost, Terminator 4, Transformers 2, Harry Potter 6! With all these movies, 2009 is bound to be one of the best summer movie seasons yet! Due to our icky state of health as of late, we haven't made it to the theater thus far. Hopefully that will soon change.
If I absolutely had to choose the movie I want to most see, I'd have to say Harry Potter 6, but I'm also dying to see Angels and Demons, Transformers 2, and Wolverine in equal parts angst and excitement! So many movies, so little time!
If anyone has seen any good movies lately, let me know! Also, what movie are you most looking forward to seeing?
If you've read my other blog recently you know things have been a little chaotic to say the least. However, not everything is all dark and dreary. On the brighter side of things, I've finished a bunch of new crochet projects, perfected a couple more recipes, and been working on my college application for the fall. All of which make me happy and help to ground me so that I can focus on the good in my life. Here's the breakdown:
Sweet Pea Hat
For this one, I actually just used the squares I made from the Sweet Pea Afghan pattern on the Lion Brand website. Used a whip stitch to join (5 Squares: 3 Green MC and 2 White MC), added a single crochet border first in pink, then white, then green, and finished with a reverse crochet border in pink.
I've also been practicing granny squares and I'm almost finished with a water bottle holder. I'll post pics of those when they're completed.
Our Favorite Casserole
- 1 lb Ground Beef
- 1 Package Instant Potatoes
- 1 Can Cream of Mushroom Soup
- 1/2 Cup Sour Cream
- Can of Mushrooms (optional)
- Shredded Mild Cheddar Cheese
Note: The problem I run into with recipes that I create, is that I just use whatever amount feels right. This can be both good and bad. Good because you can adapt it for the tastes of your family. Bad because it's hard to say how much to use sometimes.
Preheat oven to 350 degrees. Brown ground beef, I add garlic salt, pepper, onion flakes, and cayenne pepper to ground beef while browning. Meanwhile prepare instant mashed potatoes according to the directions on the package, I usually put the potato flakes in the casserole dish, then add the boiling water to them, that way I don't have to transfer the cooked potatoes to my casserole dish (I use a 2 qt casserole dish). Add Cream of Mushroom Soup, mushrooms and sour cream to browned ground beef. Bring to a boil, simmer on medium for five minutes. Add this mixture to casserole dish. Finish by adding as much cheese as you like to the top. I usually cover it in cheese, then once I take it out of the oven, I add a little more. This gives it a great texture, as well as a great taste. Bake for 45 minutes. Enjoy!
Fast Chicken Pot Pie
- 2 - 9 in. Deep Dish Frozen Pie Crust.
- Canned Chicken (drained)
- Chicken Gravy
- Can of Mixed Veggies (drained)
Let pie crusts defrost for 15 minutes prior to cooking. Preheat oven to 400 degrees. Combine canned chicken (I use the large can), chicken gravy (I buy the kind that comes in a small jar), and mixed veggies in a medium bowl. Pour mixture in one pie crust. Moisten the edges with water and flip the other crust on top of it. Pinch the edges together. Bake for 45-50 minutes or until crust is golden brown. Let stand for 10 minutes before serving. Enjoy!
Note: This recipe can be made with crusts from scratch, cooked shredded chicken and homemade gravy for an even yummier result, but if you're in a hurry, or just don't really feel like spending a lot of time in the kitchen, this is a great meal to make! Additionally, you can substitute the mixed veggies for a can of your families' favorite with an equally yummy result!
My favorite thing I've been working on recently is my college application for the Fall '09 semester! I'm so anxious to go back to school!!!! I filed my FAFSA ages ago, before the March 1st priority deadline, but since the school I hope to go to, Hawaiian Pacific University, is a private school, they do not have an actual application deadline. They accept apps on a rolling basis and as long as you have both it and you financial aid info completed by July 1st, funds are available to be distributed by the fall semester. I'll keep you posted on this process as well!

You have provided me with so much insight into myself and the world around us. You have made my world a better place by sharing your wisdom and offering guidance during times of great difficulty and strife.
You are caring and loving. You have added to my joy with your infinite support and encouragement. You have been there when I felt I could turn to no one else.
You are strong and steadfast. You have loved me even when it was most difficult to do so, and when I caused you so much pain. You never stopped believing in me, even when I stopped believing in myself. When I wandered off my path, you took my hand and showed me the way back.
We have shared laughter and tears. We have seen hopes and dreams shattered, and together we have rejoiced in goals achieved. The person I am now, would not exist if not for you. You understand me as no other could, and you elevate me as no other would.
